The globe outside appears to be incredibly scenic with everything coated with snow.

It is nevertheless snowing, and we have all-around six inches by now.

It seems like we are finding fairly a bit much more. School is closed for a handful of times, and some factories are sending their employees residence right before lunchtime. My husband Joe and sons Benjamin and Joseph still left this morning for function and haven’t occur back dwelling nevertheless. Ideally, absolutely everyone will continue to be harmless.

This previous weekend we did our pork butchering. Friday night time our spouse and children came household for the evening. The guys dressed four hogs. Anyone stayed for the evening, and then we began reducing up the meat on Saturday early morning.

Pork tenderloin, pork chops, ham, ribs, bacon, etc. had been all cut out. Then the meat was cut off the bones and the bones had been put in the large black kettle to cook off the meat. Sausage was floor and packaged.

Some sausage was canned in jars. (We like to can some for swift and completely ready meat for casseroles, etc.) We place the ham, pork chops, and bacon in the freezer as Joe likes it partially frozen to run by the slicer. Joe saved the pig brains also, and he and some of the children like those people. I say “Yuck,” but I normally finish up frying them even although I have in no way tasted it. 21 gallons of pon hoss were being produced in the huge black kettle.

The lard was rendered, and we put it in jars to seal so it stays fresher for extended. Dustin is soaking the bacon in a brine to period it. It was far more of a challenge to maintain the meat sorted in 4 different places as Elizabeth and Tim, Loretta and Dustin, Susan, and us each and every acquired a hog. Pointless to say, it was a total day’s work.

Daughters Verena and Lovina produced a good lunch for everyone with the menu getting refreshing pork tenderloin fried, mashed potatoes, dressing, gravy, corn, cheese, chocolate chip bars, and ice cream.

My good friend Ruth stopped in and pitched in to support with the meat. She took some photographs to share to support better describe the approach of butchering. Sister Verena came here Friday night time and has been remaining with us due to the fact.

Yesterday we had a good shock when my cousins Barbara and Susan showed up at my door. They asked if sister Verena and I preferred to go with them to pay a visit to sister Emma. I was finding all set to wash laundry, but I determined the laundry could wait until I obtained back.

It is not often I get a possibility to pay a visit to with them. We went with their driver to Emma’s home and soon numerous several hours handed. We experienced a nice time catching up on each other’s people. We grew up living beside just about every other.

Our mothers ended up sisters, and both equally our moms and dads have passed away. Susan has quite a few youngsters with muscular dystrophy also, so we can relate with every single other. Immediately after they dropped Verena and me off here at residence again, son Kevin and I washed the laundry.

Sausage Bean Burritos

1 pound sausage

1/2 cup chopped green pepper

1/3 cup chopped onion

1 can black or chili beans, drained

1 1/2 cups cooked rice

1 1/2 cup salsa, divided

10 flour tortillas (7 inch)

1 1/2 cups shredded Cheddar cheese

Cook sausage, green pepper, and onion drain. Stir in beans, rice, and 1 cup salsa combine very well. Unfold 1/2 cup sausage mixture down the centre of just about every tortilla. Sprinkle with 1 tablespoon cheese. Roll up and place in a greased 13×9 inch pan. Top rated with remaining salsa. Protect and bake at 350 levels for 30 minutes. Uncover and sprinkle with the relaxation of the cheese. Bake 10 minutes for a longer time.
